An Earthly WelcomeSana Restaurant, Dubai

Sana sits inside Jumeirah Mina A'Salam at Madinat Jumeirah, on the Umm Suqeim waterways, and it does not read as a restaurant inside a hotel. Clay arches, woven canopies and living greenery turn the room into a landscape. The kitchen is Uzbek, worked over tandoor and open fire, a contemporary reading of the Uzbekistan restaurant in Moscow under head chef Nozim Azimjonov, and the name itself means radiance. This welcome dinner was built to feel grounded: warm, organic and quietly opulent.

The palette is drawn from the earth itself, terracotta, copper, chocolate and ochre, lit by candlelight and softened by trailing greenery. A single long table runs beneath a sculptural rattan installation, dressed with hand tiled settings, anthuriums and sculptural desserts. Less a dinner than a gathering close to the ground, the way the most memorable evenings begin.

The evening was designed across the three rooms the restaurant gives you, because each one behaves differently. The indoor dining room seats eighty and already carries its own decorated tables and a central grill that can be worked as a live kitchen. The Moon Bar is the enclosed, screen lit room, dimmable down to almost nothing. The terrace, which seats a hundred, belongs to the last hour of daylight and to nobody else. A welcome dinner is the one night of a wedding week where half the guests have never met, so the design has to do the introducing: one table instead of several, low light, food that arrives to be shared rather than served.

The florals and drapery were built by Blossom Tree with Kate's Flow Dubai and Irina Galston. Party Social laid the mise en place, Sabr Embroidery made the embroidered name pieces, Marilisa Bragazzi the stationery, Candle Flair the candles, and Pauline Cake Dubai the dessert that sits inside the tablescape rather than beside it. Tanya Ginza did hair and makeup. The bride wore a high necked gown from Endless at Huong Boutique, changing into a second dress by Murlong Cres, with jewellery by 57 Jewellery.
